Cracked Wheat Cereal
Ingredients:
1 1/2 cups water
1/8 teaspoon salt
3/4 cup cracked wheat
Directions: In a small saucepan, bring water and salt to a boil. Quickly stir in the cracked wheat and continue to stir to prevent lumps. Reduce heat to simmer, cover and cook about 15 minutes. Stir occasionally.

Serve with a variety of condiments such as chopped apples, raisins or other dried fruit, brown sugar, honey, cinnamon sugar, coconut, fresh berries or bananas.

Servings: 4, 4-ounce
Nutrition: One 4-ounce serving provides approximately: 76 calories, 3 g protein, 16 g carbohydrates, 3 g fiber, 0 g fat, 0 mg cholesterol, 10 mcg folate, 1 mg iron, 76 mg sodium.

This is so good! Put unsweetened applesauce and dried cranberries in mine, with saigon cinnamon and a pinch of ground cloves. YUM!

A great winter breakfast! Hearty, healthy, and tasty - great to start a morning before school or work or, now like me, retired and at home. My parents fixed this for me, I fixed it for our children, and now we (both of us retired) have it for ourselves.

I grew up with cracked wheat cereal at my grandparents and still love it... I cook it in the pot or in the microwave. It is best with a bit of milk or cream, regular or brown sugar and a small pat of butter (or the like if you prefer).
In the MW I use 1/3 cup wheat and 2/3 cup water in a deep bowl.. Microwave for 2 min, stir and microwave again for two miinutes...Still has some texture to it.
I tell the kids that this is what Goldilocks and Three Bears eat.

I have a hand-mill so that I can grind the whole wheat myself. I mix the cracked wheat with cinnamon, cardomom, and cloves and keep it in the fridge. These "sweet" spices add such a good flavor, you may find you don't need sugar at all.

All I can say is that there is nothing like Cracked wheat in the morning when you have a long day ahead of you. Sometimes I eat it plain with a bit of brown sugar on it but others when I feel more extravagant, I top it with a fruit compote which is easy to make and tasty too. This recipe is perhaps one of the cheapest to live on as a college student.
