Consumers Go With The Grain

Claims relating to the benefits of whole grains are now the most sought after health claims on food packages, followed by claims about dietary fiber, according to the Food Marketing Institute’s (FMI) 2011 U.S. Grocery Shopper Trends report. Restaurants feature exotic rice, spelt, faro, amaranth, and other lesser known grains in everything from salads and pancakes to pizza crusts, soups, cocktails, and desserts.Read more

With the boom in tablet technology, recipes have begun to travel from home to the office to the market and into the kitchen. With features like embedded links, built-in timers, infographics and voice prompts, the richness of some new apps — like Baking With Dorie, from the baking expert Dorie Greenspan; Jamie Oliver’s 20-Minute Meals; and Professional Chef, the vast app released last month by the Culinary Institute of America — hint that books as kitchen tools are on the way out.

Cookies Most Popular Baked At-Home Treat


Cookies are the most popular item for home bakers, according to a 2011 online survey by cake decorating, bakeware and food crafting company Wilton Enterprises, Woodridge, IL.  While cookies are the most popular baked at-home treat (82% of respondents), items that have significantly grown in popularity since 2008 are: cakes (up 17%), brownies (up 18%) and cupcakes (up 15%).

The survey also notes that “for holidays” is THE most popular reason for baking (78%).

How to make whole grain bread from freshly milled flour
For this recipe, you will need
4 cups of freshly milled flour.
1 ½ cups of milk
¼ of oil (I like grapeseed oil)
1 Tablespoon of honey
2 teaspoons of salt
2 tablespoons of soy lecithin powder
And 1 tablespoon of yeast.
Warm the milk to 105 to 110 degrees. Then add the honey. Pour into a heat safe container, add yeast and let sit 10-20 minutes until the yeast bubbles up about an inch. Pour this mixture into your mixer. Read more
