1 cup lukewarm water
1 package active dry yeast
1 teaspoon salt
2 cups all-purpose flour

Preheat oven to 500° F.

Blend whole wheat flour, water, yeast and salt until moistened and well blended. With electric mixer, beat 3 minutes on medium speed. Work in all-purpose flour and develop dough by hand kneading or with dough hook until smooth and elastic.

Place dough in greased bowl and cover with plastic wrap or damp towel. Let rise one hour at 80° F. Divide dough into 30 pieces, shaping into smooth balls and covering with damp towel; let rise for 30 minutes.

Italian Cheese Bread

Ingredient List: 

2 cans large refrigerated biscuits (8 per can)
1/2 cup butter, melted
1 tablespoon Italian seasoning
1/3 cup Parmesan cheese

Preheat oven to 375°F.

Lightly coat a Bundt pan with baking spray.

Combine butter, seasoning and cheese in bowl. Lightly dip one side of the biscuit into the butter mixture and place butter-side down in Bundt pan. Continue to layer all of the biscuits. Bake 25 to 30 minutes. If the top biscuits become too brown, lay a piece of aluminum foil over top, shiny-side up.

Set pan on cooling rack for 10 minutes. Invert onto serving plate or basket. Serve immediately.

Ice Cream Muffins

Ingredient List: 

1 1/2 cups enriched self-rising flour
1 1/2 cups all-purpose flour
1 1/2 tablespoons baking powder
3/4 teaspoon salt
2 cups vanilla ice cream (or flavored, if you prefer), melted
3/4 cup cinnamon, chocolate or peanut butter chips, or combination

Preheat oven to 350°F.

Measure dry ingredients into a medium bowl; stir in ice cream just until flour is moistened. Stir in chips. Spray muffin cups with non-stick spray and fill cups 3/4 full.

Bake for 20 minutes or until golden brown.

1/2 cup water, 110 to 115° F
4 1/2 teaspoons yeast (2 packages)
2 cups fat-free milk
1/4 cup margarine
1/3 cup honey
1/4 cup brown sugar
2 1/2 teaspoons salt
1/2 cup wheat germ, optional
2 tablespoons wheat gluten, optional
3 cups whole wheat flour, divided
4 to 4 1/2 cups bread flour, divided

Preheat oven to 375°F.

In a large mixing bowl, dissolve yeast in warm water. Let stand 10 minutes.

Warm milk to 110 to 115°F; stir in margarine, honey, brown sugar and salt; cool to lukewarm. Add milk mixture to yeast; add wheat germ, wheat gluten, 2 cups whole wheat flour and 3 cups bread flour. With an electric mixer, beat for 3 minutes.
