Slow Cooker Wheat Berry Cereal

Ingredient List: 

1 cup whole wheat berries
1/2 teaspoon salt
3 cups water
1 cup fat-free vanilla yogurt
3 cups fresh fruit (slice bananas or strawberries, chopped kiwifruit, blueberries or raspberries)

Combine wheat berries, salt and water in a small (4-quart) slow cooker.  Cook on low setting overnight (about 8 hours).  Spoon cooked cereal into bowls; top with yogurt and fruit.Read more

Swiss Cheese Breakfast Biscuits

Ingredient List: 

1 cup regular whole wheat flour or white whole wheat flour
1 ¾ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 tablespoon sugar
½ cup cold butter or margarine
1 cup (4 ounces) Swiss cheese, shredded
1 tsp. minced, dried onion flakes* OR 1/3 cup green onions, diced
2 large eggs, slightly beaten
1 cup low-fat buttermilk


*If using dried onion flakes, let sit in the buttermilk until adding it to the mixture.

Combine the dry ingredients in a large bowl. Cut in the butter or margarine until the mixture is crumbly.

Stir in the cheese.

Add the eggs, buttermilk and onion. Stir just until moistened (do not over-stir).

Drop by tablespoons 2 inches apart on greased cookie sheets. Bake at 425 0 F. for 12-13 minutes or until golden brown.

Ham and Swiss Breakfast Casserole

Ingredient List: 

6 ounces ham, thinly sliced, low sodium, extra lean (NOT honey-baked ham)
6 ounces Swiss cheese, shredded
3 slices enriched white bread
3 slices whole wheat bread
1 cup skim milk
2 eggs, large
1 tablespoon yellow mustard
½ teaspoon “beau monde” seasoning (or alternate)
½ teaspoon Worcestershire sauce
1-2 dashes onion powder

Lightly spray an 8” xX 8” baking pan with non-stick spray. Lay 3 slices of bread in the bottom. Layer ½ the ham and ½ the cheese. Repeat layer of bread, ham and cheese.
Beat together remaining ingredients and pour over the casserole. Cover and refrigerate over-night. Bake, uncovered, for 1 hour at 325 degrees F; serve hot.Read more

1 15-ounce can sliced pears in 100% pear juice,

Crepe Cake With Ham and Spinach

Ingredient List: 

2 9-ounce packages frozen creamed spinach, (2 cups) (choose “with real cream sauce”)
1 12-ounce package diced boneless, lean ham, low-sodium if available
2 large eggs
1 cup 1% milk
10 prepared 9-inch French crepes 

Preheat oven to 350 degrees F. Lightly coat a 9-inch round cake pan with cooking spray.

In a medium bowl, stir together the creamed spinach and ham until blended.

In a small bowl, whisk together the eggs and milk.

Lay one crepe in the bottom of the prepared cake pan. Spread a little of the spinach over the crepe. Repeat with all the crepes and all the spinach, ending with a crepe. Pour the egg mixture over and around the crepe cake. Bake 45-50 minutes, until lightly puffed in the center and nicely browned.Read more

Ingredient List: 

1 package active dry yeast or quick-rise yeast
1/2 teaspoon sugar
1/8 cup warm water (105° to 115°F)
1 cup fat-free milk
1/4 cup sugar
1 teaspoon salt
2 tablespoons shortening
1 large egg
2 cups whole wheat flour
1 1/2 cups bread flour or all-purpose flour

1 cup brown sugar, packed
1/4 cup margarine
1/4 cup flour or cake crumbs
1 to 1 1/2 tablespoons fat-free milk
2-3 teaspoons cinnamon or to taste

Breakfast Biscuit

Ingredient List: 

2 cups all-purpose flour **
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup 2% milk

Preheat oven to 450°F.

In a bowl, stir together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Make a well in dry mixture; add milk all at once. Stir with fork just until dough clings together. Knead gently on lightly floured surface (10 to 12 strokes). Roll or pat dough to ½-inch thickness. Cut with 2½-inch biscuit cutter; dip cutter into flour between cuts. Bake on an un-greased baking sheet in preheated oven until golden, about 12 minutes.

Whole Wheat Banana Bread

Ingredient List: 

2 cups white whole wheat flour
¾ teaspoon baking soda
½ teaspoon salt
¾ cup sugar
2 Tablespoons butter, softened
1 ½ Tablespoons olive oil
2 large eggs
1 ½ cup mashed bananas (about 5 medium bananas).  Extra-ripe bananas or previously frozen bananas can be used for a more intense banana flavor.
1/3 cup plain, non-fat yogurt
1 teaspoon vanilla extract
Non-stick cooking spray

Combine flour, baking soda and salt in a medium-sized bowl. 

Put sugar, butter and olive oil into a large bowl and beat with an electric mixture until well blended.  Add eggs one at a time beating well after each addition. Add mashed bananas and yogurt then beat until well blended.  Add flour mixture and beat at low speed just until blended.

Pour batter into a 9 x 4 x 4-inch loaf pan, which has been generously greased (oil or non-stick cooking spray can be used) and floured to prevent sticking.Read more

Almond Breakfast Bread

Ingredient List: 

1 1/2 cups fat-free milk
4 cups bread flour
1 tablespoon gluten flour
1/4 cup almond paste E (cut into small pieces)
2 tablespoons sugar
1 3/4 teaspoons salt
2 tablespoons margarine
1 tablespoon almond extract
2 teaspoons active dry yeast

Add all the ingredients in the order listed into the bread pan. Follow the instructions for your machine. Let cool and then glaze, if desired.

In medium bowl, mix 1 cup powdered sugar with 2 to 3 tablespoons milk and ½ teaspoon almond extract. Top with sliced almonds.

Be sure to use almond paste, not marzipan.
