Wheaty Peach Cobbler

Ingredient List: 

Filling:
10 to 12 peaches, peeled, pitted, and cut into 1-inch chunks*
2 tablespoons cornstarch
5 tablespoons light brown sugar
1 teaspoon lemon juice, freshly squeezed
Pinch of salt

*If fresh peaches are unavailable, frozen can be substituted

Topping:
1 cup whole wheat flour
1 cup unbleached, all-purpose flour
1/2 teaspoon salt
1/4 cup light brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon cinnamon
6 tablespoons (3/4 stick) cold unsalted butter, cut into pieces
3/4 cup low-fat milk
1 tablespoon low-fat milk
1 tablespoon sugar

Directions:
Preheat oven to 400 degrees F.  In a bowl, combine the peaches, cornstarch, brown sugar, lemon juice and salt, tossing gently.  Transfer the mixture (filling) to a 9 x 9-inch or 8 x 11 1/2-inch pan; set aside.Read more

Chocolate Hazelnut Cereal Haystacks

Ingredient List: 

1 cup semisweet chocolate chips
1 1/2 cup chocolate hazelnut spread (such as NutellaTM)
1 1/2 cups wheat squares cereal (Such as Wheat Chex TM)

Directions:
Line cookie sheets with wax paper.  Place about 2 inches of water in a saucepan and bring it to a simmer.  Put the chocolate chips and hazelnut spread in a bowl and place it over the saucepan.  Stir the chocolate occasionally to melt it.

Remove melted mixture from heat and stir in cereals to coat them completely.

Using a large spoon, place spoonfuls of the mixture on waxed paper lined cookie sheets in mounds about 1 1/2 to 2 inches in diameter.

Refrigerate when done to set the chocolate.Read more

Mini Fresh Fruit Cups with Pastry Topper

Ingredient List: 

1 refrigerated piecrust
1 teaspoon sugar
½ teaspoon cinnamon
1 1/2 cups fresh fruit (single fruit or a mix of whatever is in season such as strawberries, blueberries, peaches, etc.)
2 teaspoons wheat germ
Honey (optional)
Colorful, decorative sprinkles (optional)

Directions:
Preheat oven to 375°.

Mix sugar and cinnamon together in a small bowl.  Using a cookie cutter (3 inches or smaller), cut piecrust into shapes.  Sprinkle shapes with sugar cinnamon mixture.  Bake on parchment lined cookie sheet in preheated oven for 10-12 minutes until lightly browned.  Top with decorative sprinkles. Cool.

Cinnamon - Pear Trifle

Ingredient List: 

10 cups cubed pre-baked cinnamon rolls, (2 10-ounce packages)
1 cup prepared caramel sauce
1/4 cup dark rum, optional
1 orange, washed, zest grated and juice squeezed (approximately 2 ounces of juice and 1tablespoon zest)
3 15-ounce cans pear slices, drained and diced
3 cups prepared vanilla pudding (1 5.1-ounce box instant vanilla pudding and pie filling, prepared with 3 cups 1% milk)
1 cup heavy cream, whipped till firm
¼ cup toasted sliced almonds

Into a trifle bowl, or medium glass bowl, put 2 1/2 cups cinnamon roll cubes.

In a medium bowl, blend together the caramel sauce, rum (if using), orange zest and juice.

Drizzle the cinnamon roll cubes with 1/3 of the caramel sauce. Top with 1/3 of the pears and 1 cup vanilla pudding.  Continue to layer in the same manner until you have used all the cubes, sauce, pears and pudding.

Cover and refrigerate at least 2 hours and up to 24 hours.Read more

Raspberry Lovers’ Pudding

Ingredient List: 

2 12-ounce bags frozen, unsweetened raspberries, thawed
1/3 cup sugar
¼ cup raspberry flavored liqueur, optional
1 1-pound loaf very thin sandwich bread, crusts removed
½ cup heavy cream
Fresh raspberries and mint, to garnish, optional

In a medium saucepan, bring the raspberries, sugar and liqueur (if using) to a boil. Boil for 3 minutes and remove from heat.

Line a 9x5-inch loaf pan with plastic wrap. Cover the bottom with 3 slices of bread. Use 8 slices, standing up, to line all the sides of the loaf pan. Cover with about 1/5 of the raspberries. Over the raspberries lay 3 more slices of bread. Repeat this layering until all the raspberries have been used, ending with a layer of bread slices. If you have bread leftover, set it aside for another use.Read more

Whole Wheat Raisin Cookies

Ingredient List: 

1/2 cup butter or margarine, softened
1/4 cup sugar
1/2 cup packed light brown sugar
2 large eggs
1 cup uncooked quick-cooking oats
3/4 cup whole wheat flour
3/4 cup raisins
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda

Directions: 

Preheat oven to 375°F.
In a large bowl with mixer at medium speed, beat all ingredients until well mixed, occasionally scraping the bowl.
Drop by teaspoonfuls, 1-inch apart, on cookie sheet.

Bake 10 to 12 minutes or until lightly browned. Immediately remove cookies to wire racks; cool.

2 cups all-purpose flour
⅔ cup sugar
1 teaspoon baking soda
½ teaspoon salt
½ cup semi-sweet mini chocolate chips
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract

Directions: 
Preheat oven to 350°F.

In medium bowl, mix together flour, sugar, baking soda, salt and chocolate chips. Add eggs and vanilla, stirring until blended. Turn dough onto lightly floured surface; knead 8 to 10 times. Form dough into a log about 2-inches wide and 16-inches thick.
