Baked Whole-Wheat Tortilla Chips

Ingredient List: 

8 inch whole-wheat tortillas

Kosher salt (optional)

Preheat oven to 375°.

Lightly spray both sides of tortilla with cooking spray.  If desired, sprinkle one side very lightly with salt. 

Cut each tortilla into 8 pieces.  Place on parchment lined baking pan.

Bake until golden brown, about 12-15 minutes, turning over ½ way through.  Cool on rack.  Serve with favorite dip, salsa or guacamole.

Servings:  4 chips (1/2 a tortilla)

Beef and Sausage Meatloaf with Bulgur

Ingredient List: 

¾ cup bulgur, uncooked
¾ cup skim milk
1 pound extra lean ground beef
8 ounces ground Italian sausage
¼ cup Cilantro Pistachio Pesto* (option: use purchased pesto)
1 cup diced onion
2 tablespoons tomato paste
2 eggs, large
1 (14.5 ounce) can diced tomatoes
½ teaspoon dry oregano
¼ teaspoon ground black pepper
½ teaspoon salt
¼ cup catsup for topping

Preheat oven to 350°.

In a large bowl combine bulgur and milk, stirring until combined.  Let stand until milk is absorbed, about 10 minutes.  Add ground beef, Italian sausage, pesto and all remaining ingredients except catsup.  Using hands, mix until well combined.

Shape into 1 loaf or four small loaves, place on sheet pan.  Top with catsup.  Bake in preheated oven until internal temperature of meat reaches 165°; about 1 hour.

Chicken, Kale and Black Bean Quesadillas

Ingredient List: 

1 poblano pepper
2 cups baby kale
2 tablespoons water
¼ teaspoon salt
1 cup rinsed and drained no-salt added canned black beans
4 (8 inch) whole-wheat flour tortillas
2 cups chopped or shredded cooked chicken (cooked leftovers or rotisserie chicken are options)
1½ cups (6 ounces) shredded Mexican Blend cheese

Place poblano pepper on foil under broiler until skin blisters and darkens, about 5 minutes.  Seal in foil until cool enough to handle -- about 5 minutes, remove skin, seeds and stem; dice.  

Heat water in small skillet.  Add kale and salt, stir until kale is wilted, remove from heat.  Place ½ cup beans in a bowl; mash.  Add remaining ½ cup beans, diced poblanos and kale; mix.

Chicken Noodle Soup

Ingredient List: 

2 teaspoons olive oil
4 carrots, sliced
3 stalks celery, sliced
1 cup diced onion
2 cups sliced mushrooms
2 cloves garlic, minced
2 teaspoons fresh thyme leaves or 1 teaspoon dry
2 teaspoons chopped fresh sage or 1 teaspoon dry
1 teaspoon Italian seasoning
½ teaspoon dry oregano
½ teaspoon ground black pepper
6 cups reduced sodium chicken broth
2 cups water
3 cups cooked shredded or roughly chopped chicken (cooked leftovers or rotisserie chicken are options)
2 cups dry whole-wheat wide noodles (like egg noodles)

Heat oil in a large soup pot.  Add carrots, celery and onion and sauté for a few minutes; add sliced mushrooms and next 6 ingredients (through black pepper).  Stir to combine.  Cook for about a minute to allow flavors to combine.

Add broth and water to the pot and turn heat to high.  When broth begins to simmer, stir in chicken and noodles.  Reduce heat to medium low, cover and simmer for about 8 minutes or until noodles are tender.

Ladle into bowls and serve.

100% Whole Wheat Cinnamon-Sugar Cookies

Ingredient List: 

6 Tablespoons light olive oil
1 cup sugar
2 tablespoons milk, 1% or non-fat
1 teaspoon vanilla
1 large egg (or 2 egg whites)
1 3/4 cups white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
½ teaspoon nutmeg
1/8 teaspoon salt

In a medium bowl, combine olive oil and sugar; beat until well combined – about 1 minute.

Add milk, vanilla and egg (or egg whites); blend well.

In a large bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg and salt; gradually stir in liquid mixture and continue until well mixed.

Cover with plastic wrap; refrigerate 30 minutes - 1 hour for easier handling.

Heat oven to 375°F.

Pumpkin Yeast Rolls

Ingredient List: 

1 large egg
¾ cup very warm water (approx. 120 degrees F)
¾ cup canned pumpkin, unsalted (or mashed, canned sweet potatoes)
1/3 cup vegetable oil
¼ cup sugar
¾ tsp. salt
3.5 cups bread flour or 3 cups plus 6 tablespoons white whole wheat flour
1 tablespoon gluten (optional)
1 package active dry yeast

Place ingredients in the bread machine in the order listed. Select the dough cycle and let the machine do its work.  (Check early in the cycle to make sure the dough is not too moist or too dry and add flour or water as necessary.)
Divide dough into 18 pieces and shape into rolls.
Place in two 8” X 8” greased pans and let rise until double in size. Bake for 20 minutes at 375 degrees F.Read more
